Vanilla keto mousse with blueberries

Blueberry vanilla mousseSummer is here and berries are in season again. This is good news for us as berries are generally quite low in carbs. They help to fill the gap left by fruit.

One traditional way to have berries is to mix them with cream, whipped or plain. This keto mousse recipe takes that concept a couple of steps further, to form a keto fat bomb comprised mostly of cream, with vanilla and blueberries.

It is creamy, rich and very, very high in fat. Anyone who is not on a ketogenic diet should probably stop reading now! You have been warned.

The recipe clocks up about 4g net carbs, from cream cheese and blueberries. You could lower this by substituting some of cream cheese with more butter or cream instead.

This recipe is based on my very popular keto chocolate mousse from last year. I tweaked the proportions slightly.

I am using blueberries for this recipe, but you can use any other berries instead, or skip that step and just have a vanilla-flavoured mix.

I am using a real vanilla pod but you can also substitute with 1 tsp sugar-free vanilla extract.

  1. Just tried this, using unsweetened white chocolate, melted and cooled, in place of the butter. It made an awesome white chocolate/blueberry fat bomb! This would also be delicious with raspberries.

    1. Ooh – white chocolate – I like your thinking! I must try it too.

Agree about raspberries – really any berries would work instead of blueberries.

Thank you for sharing your ideas, and best of luck with your diet!

        1. Oh dear – yes, you are absolutely right – it mentioned biscuits by mistake! I copied the layout for the recipe from a different one, changed the contents but missed out the bit about the biscuits. Corrected now! Thanks for letting me know.

  2. I know this is an old recipe, but I just stumbled upon it. Made it tonight so I can have for breakfast. Super yummy! Thanks for sharing!!

  3. Hi thanks for some awesome recipes. It’s tough to find low carb granulated sugar options for a keto diet in South Africa. I use stevia drops, what adaptions can I make to make cookies with the drops?
